- Roast sweet potatoes. Preheat oven to 425°F. Toss cubed sweet potatoes with 1 tablespoon olive oil, paprika, salt, and pepper. Roast for 25 minutes.
- Cook turkey. Heat remaining oil in skillet. Add turkey and seasonings, cook until browned (6-7 minutes).
- Add veggies. Stir in bell pepper and spinach, cook until wilted (3-4 minutes).
- Serve. Divide sweet potatoes and turkey mixture between plates.
